FAQs
Where can I install my Alfa oven?
In virtually any outdoor location. Every size other than the Portable can be bought with a custom-made base, which has casters that allow you to move it around, giving you the option of storing it in a garage or outbuilding in the wetter months. We also sell robust, waterproof covers, so you can permanently install your oven, either on its base or integrated into your garden or terrace set-up, without worrying about the weather. Gas-fired ovens can be connected either to a mains gas supply or to an LPG cylinder.
Our smaller models, such as the 1 Pizza and Portable, use the same materials and technology as the larger ovens, and offer the same incredible heat and performance, so are ideal if space is in short supply.
Can I use my oven all year round?
Yes, you can cook in the oven in all weathers.
What can I cook in an Alfa oven?
Pretty much anything! As well as pizzas, nothing prevents you from using them at lower temperatures to bake bread, puddings or pies, roast fish, meat or vegetables, or cook a casserole, curry or paella. Our simple, innovative BBQ 500 accessory also allows you to temporarily convert your pizza oven into a barbecue pit.
How long does it take to cook a pizza in an Alfa oven?
Thanks to the high temperatures the ovens can reach (up to 500°C), you can cook a Neapolitan-style pizza in just 90 seconds.
What makes Alfa ovens stand apart?
The performance of our ovens is driven by Alfa’s patented innovations. Rather than using lava stone or ceramics, our oven floors are constructed from our own refractory brick, which has better insulating capability, lower electrical conductivity and higher resistance to acids. The three-layer ceramic fibre insulation in the dome allows the temperature to rise more quickly than most ovens and retain heat for longer. Our flue system has been painstakingly engineered to drive hot air back down to the cooking surface rather than allowing it to escape through the chimney.
Where are Alfa products made?
All Alfa ovens and accessories are 100% made in Italy.
Should I buy a wood-fired oven or a gas-fired oven?
The more traditional wood-fired ovens require a little more admin but have the benefit of infusing the food you cook with a whisper of wood smoke. Gas is more convenient and easier to control but doesn’t offer that extra layer of flavour.
The compact structure and well-regulated air flow of our wood-fired ovens make them highly efficient and much easier to control than most pizza ovens on the market.
Our innovative Hybrid Kit allows you to convert a gas-fired oven into a wood-burning oven with minimal effort. It is available for all gas models other than the 1 Pizza or Portable.
What kind of wood should I use in my wood-fired oven?
You will need to use kiln-dried hardwood or lumpwood charcoal that has not been coated in accelerants. For maximum heat and flavour, the best wood species are oak and beech. Never use evergreen wood, as this burns too quickly and can leave heavy deposits of soot and creosote.
How should I light my wood-fired Alfa for the first time?
When lighting your wood-fired oven for the first time, you need to build the heat up gradually to a temperature of around 300°C. This will allow you to dry out the moisture and gently season the oven.
How do I put the fire out in my wood-fired oven?
Just let the fire burn out naturally. Never use water to extinguish the fire. As the fire is slowly going out, the oven walls retain plenty of heat, making this the perfect time to bake some bread or cook a dessert.
What kind of gas cylinders should I buy for my gas-fired Alfa oven?
Always buy liquefied petroleum gas (LPG), as opposed to natural gas.
Can I connect my gas-fired oven to my mains gas supply?
Yes. We strongly advise that you use the services of a certified Gas Safe engineer.
How should I clean my oven?
Between baking sessions, when the stones are still hot, scrub the oven floor with a brush to remove food residue and burnt flour. For a deeper clean, use a damp cloth to wipe burnt food away after the oven has cooled. If you have a wood-fired oven, remove the ash with a metal shovel once the oven has completely cooled down.
