Master the pizza Turning Peel and you are on the road of becoming a true Pizzaiolo! After launching your pizza with our Aluminium or Beechwood Pizza Peel use the Turning Peel to rotate, move pizzas within the oven and serve straight to the table.
The thin peel makes light work of sliding underneath a thick based Neapolitan or thing and crispy pizza, rotate your pizza 45° to get even blistering and colour on the cornicione (crust).
The patented Alfa Turning Peel, can be adjusted into three sizes, perfect for any size oven from portable to the 5 Pizze.

What is the Moderno 1 made from?
The cooking chamber is entirely made of reinforced stainless steel.
The double layer of ceramic fibre insulation used in commercial ovens contains heat and prevents the external frame from overheating.
What do I need to get started?
To bake with the oven, you just need small logs no more than 5 cm (2 in) thick. With 2 kg (4,4 lbs) of firewood you can really cook throughout the evening!
Always use the wood basket so as not to overload the oven with logs and to better manage the food on the floor.
Should I use wood or gas?
Wood has always been the fuel of choice for those who love tradition and strong flavours. It’s the perfect oven if you really like cooking outside and you are not afraid of putting your nose to the grindstone.
