Because the high temperatures kill any germs and bacteria, wood-burning ovens don’t need to be flushed out with cleaning products – any food spillages will be burnt to ashes. After each use (or, if you’re feeling a bit lazy, when the ash has built up to an unmanageable extent), leave the ashes to cool then sweep them out with a metal brush into a suitable metal container. Afterwards, you can use the cooled ash as a fertiliser for your garden. Never throw water into the pizza oven, as this could damage its components.
